To me I don't think a domain names ages is all that important. Its about the contents of the site that would make or break it. Although a domain that's been operational for 10 years would prob rank better than a domain of one week old its really all based on your marketing teams expertise and their worth. It also comes down to how old is the domain and was it owned by someone else before? Have they had negative feedback that could throw a spanner in the works on your efforts for the future... Just a few random thoughts that's running through my mind and I hope they are of some use to you

How does the typical person browsing the internet even know the age of a domain?
When you land on a website, is that a question you ask yourself?
        Or even research?

And if you do research it, why?

I think for a human to start looking at the age of the domain, the cause is going to be the content has raised a trust concern. And even then, I wonder how many folk would consider the age of the domain as an indicator.

So at that level - probably not that significant.

Of course, when it comes to search indexing the subject takes on far greater importance.
But seeing as that's clearly your main interest here, you probably can tell us more about that than we could tell you.

Some of my domains are old, so old they have fallen into dormancy. And it's a battle to get them kick started again when they are needed. Despite this I still hang onto them because I believe a link from an older well established domain looks a lot better and might even carry a little extra weight.

Google search will give preference to an older, established domain with similar info.

I thought that with recent updates though the domain age still weighs in, fresh content will rank higher

Fresh content will get an elevated SERP position relative to where it would normally rank, but the "new content bonus score" effect wears off very quickly.

Domain age play its role usually in SEO work. The older the domain of a website, the greater the Google will prefer it to rank. This helps in getting older websites get ranked easily then the newer one.

Domain Age does matter when it comes to search engine optimization. Google definitely consider it as a part of algorithm but its not the sole criteria. Suppose your domain is 10 year older but it just sits as an parked domain then it might not provide the same effect a domain which consistently provides a fresh content to the Google index.

I won't give it much credit when it comes to user although it won't hurt you, get a good strategy and marketing plans and you should rock.
