Well in my opinion only I would disable updates and rather just go with the Service Packs. They seem to be much more reliable. Fact is XP pro with an updated SP is as stable as the earth's orbit. I never ever experienced boot problems. Every single time it was almost always the mbr and or a faulty psu.
I also recommend that only your firewall needs updating not much else actually comes to mind. Now I have done this to countless computers hundreds of them and it works. It just does. So why not take one of your "expendable computers" and disable the windows updates and only do SP updates along with a good free antivirus and see how it goes?
